I'm about to put my Pi with DAC in a cabinet where I cannot easily reach it. So it needs to be 'always on', and automatically boot after a power failure.
Am I right in reading the info on the Dac's page so that if I remove the uC and put a wire-bridge between the two points where a switch is drawn, it will be on as soon as power is provided?

Yes exactly.

The DAC will also work with power given only to the PI.

And of course there is a follow-up question...
If I don't use the power management and/or display function, the DAC I have now seems to be a bit overkill. But I can use this in my soon to build second setup, so what would be (sound quality-wise) be the best choice for a rasp-pi DAC without these functions? All DACs you sell seem to use the same chip, but the prices range from 16 to 80 Euro. Is there more difference than just functionality?

Functionalities, connectivity, power filtering, TCXO Oscillator and form factor.
Also the DAC parts are not 100% same.
